I always like to put meticulous planning and careful contemplation into my menu based on who my guests are. For example, I can prepare numerous variations of chicken or fish dishes, yet the choice of herbs and spices will be chosen intuitively at the inspiration of the moment depending on who my guests are. So while I may choose rosemary skewers for a shrimp dish for a specific group of dinner guests, the next time around, I may use lavender skewers with a different group. Hence, when planning my menu, I close my eyes for a moment and start thinking of herbs, spices and aromas and I then start pairing them up with each one of my dinner guests. I then take out my mortar and pestle and I begin to crush and grind, using a good dose of love, until that distinctive aromatic blend fills the air. The most gratifying part is watching your guests relish every bite, laughing away and smiling. After all, it’s all about the right choice of herbs and spices..!
