Have I mentioned how much I am loving ‘Crazy sexy kitchen’ with Kris Carr and Chef Chad Sarno? This awe-inspiring recipe book landed in my kitchen four months ago, personally signed by Kris with these exact words: Peace and veggies, Love Kris. My journey has since been exactly that! Seasoned with Kris’ wisdom, inspiration and humor, this amazing book has indeed ignited what Kris calls ‘a mouthwatering revolution’ for me too!
Today, I gave the Roasted Brussels Sprouts a shot. I know that many of you may be pouting at the thought of this fairly bitter veggie, but let me tell you that it was absolutely lip smacking!
Here’s the recipe with some minor adaptations to suit my taste.
Roasted Brussels Sprouts with Pistachios and Cipollini Onions (Crazy sexy kitchen)
3 cups Brussels sprouts (cleaned)
1 cup cipollini onions or shallots, peeled and chopped
¼ cup raw pistachios, chopped
½ tsp herbal salt
Pinch of dry parsley
2 tbsp ghee butter (or olive oil)
1/5 cup water
Preheat oven to 375ᴼF. In a bowl, combine Brussels sprouts, onions and pistachios and toss remaining ingredients in. Roast mixture on sheet pan for 15 minutes, shaking pan about halfway through to ensure even cooking. Serve hot.
